Wash the peaches and cut them into pieces, discarding the pit and keeping the skin. Place in the freezer for at least 8 hours or overnight.

Using a food processor, blend the frozen peaches, yogurt and lemon juice until completely mixed. Add stevia to sweeten, if needed.

Place in the freezer for at least 2 hours before serving, garnished with mint leaves.
